The village of Cherni Vit in the Troyan region of the Balkan Mountain in Bulgaria is preparing to welcome hundreds of guests from the country and abroad this weekend. On September 23, the village will once again host the traditional festival of homemade cheeses. Dairy products from different regions of Bulgaria will be presented, as well as homemade bread, honey, wine and Bulgarian salt.
The organizers have also planned cheese-making demonstrations and an introduction to lactic acid bacteria in wild bread yeast. The culinary festival is a great occasion to try traditional local cheeses in combination with local wines.
The emblem of Cherni Vit, which attracts tourists and glorifies Bulgaria at world culinary exhibitions, is the infamous green mold cheese, produced only and only in this village. In the past, the locals prepared their cheese in wooden vessels. When the brine cheese sits, the Roquefort mold grows on it. After ripening, it is taken out on a wooden table.
Traditionally in Cherni Vit, cheese is made only from sheep's and goat's milk, claims Tsvetan Dimitrov - producer of the unique Bulgarian delicacy.
